Suadero - Slow braised beef brisket and grilled onions.
Carnitas - Slow braised pork confit.
Cochinita Pibil - Pulled pork slow cooked in orange juice and mayan spices.
Tinga de pollo - Pulled chicken cooked with tomato sauce, chipotle and fried onions.
Chorizo - Ground pork sausage with guajillo pepper and spices.
Grilled Chicken - Seasoned grilled chicken.
Sautéed Mushrooms - Sautéed mushrooms and onions seasoned with epasote leafs.
